Founded by Angela and John Tonniges, our passion for history and family heritage runs deep. With roots in both the Tonniges and Fehlhafer families, our journey into the world of butchery is rooted with generations of butchers and slaughterhouse workers.
Angela's upbringing in Naber’s Produce instilled a love for fresh, homegrown ingredients. Our dream began with a simple idea – to create something meaningful out of surplus produce and a shared love for butchering.
After months of waiting, our dream started to take shape when we acquired an old, empty bar in Gresham. This began a year-long process of refurbishing. During that time, John spent many evenings away from our two young sons, who often referred to the building as the "broken bar".
Despite the challenges of refurbishing an old structure, we persevered, creating a space for our boys to learn about butchering and a store to benefit our community.
Today, we proudly hold a grocery store license, allowing us to offer a wide range of quality products. But our journey doesn't end there. We continue to learn and grow, seeking guidance from industry veterans. With their mentorship and the support of our community, we strive to provide the best possible experience for our customers.
